The story begins in the sunny Languedoc-Roussillon region of southern France by Mathilde Boulachin, from the Champagne region origin, whose goal is to revolutionise wine tasting and offer consumers unique and unexpected wine collections. But the Pierre Chavin range of non-alcoholic 'wines' was born out of the two successive pregnancies of Mathilde Boulachin, currently head of the company. Including periods of breastfeeding, Mathilde had to make do with 4 years of total abstinence, but as a true lover of wine and the terroirs in which she grew up (Champagne region), Mathilde imagined creating a wine, with all the dimension it represents, but with 0.0%* alcohol. This non-alcoholic wine-based drink would be intended not only for pregnant women, but for all those who choose not to drink alcohol and those who to those who cannot or do not wish to do so for medical, ethical, religious, professional and sporting reasons.
His choice was confirmed by his years in Scandinavia, where the rules on drink-driving are very strict. With this zero tolerance, the Nordic countries presented themselves as a privileged market where it was obvious that Pierre Chavin would take off.
The idea was there, but it took a lot of research work to turn it into reality. Because Pierre Chavin is not just a range of alcohol-free "wines", but offers a Premium profile with aromas and flavours to satisfy the most demanding palates.
Mathilde, in her search for perfection, did not stop at creating a simple alcohol-free drink. She went further, offering a healthy, alcohol-free range and an interesting alternative to high-calorie, sugar-rich soft drinks and juices. The notion of conviviality and complicity that one feels when enjoying a glass of wine can finally be rediscovered without consuming alcohol.
The grapes also come from the best organic vineyards in Gascony and Provence and are blended to create superb wines at excellent prices. The company also uses the latest eco-friendly technologies, such as lightweight bottles, wood-free paper labels and corks made from sustainable sugar cane. Chavin wines contain no added sulphur, wheat, dairy products, GMO ingredients, artificial flavourings, colourings and preservatives. Suitable for vegans and vegetarians.

In addition, great attention has been paid to religious diversity, customs are not the same, especially when it comes to food and drink.

After responding to a strong demand from the Muslim community and developing Halal-certified non-alcoholic wines, Pierre Chavin adapted to the important demands of the Jewish community. Although harvesting and winemaking methods are essentially the same as for traditional wine, Kosher wine must only be handled by practising Jews and all stages of winemaking must take place under the supervision of rabbinic delegates accredited under oath in the consistory of the major cities representing the cult. For the production of its Kosher wines, Maison Chavin has complied with the protocol by having "kosherised" the equipment and containers used during vinification, such as stainless steel vats and more. Not being part of the Jewish community, however, Pierre Chavin calls on a representative of the cult during winemaking operations. You will be able to recognise one of our Kosher wines by the certification logo of the Beth Din Consistory of Paris on the label and by the words "kosher" in Hebrew letters on the cork. Pierre Chavin thus allows the entire Jewish community to taste its white, red or rosé wines guaranteeing total respect for the laws of Kashrut.

Production process and dealcoholisation method

A unique production process for a 0.0% alcohol wine.

First of all, it is produced according to traditional winemaking techniques using grapes from carefully cultivated vineyards in the South of France. The grape varieties are selected according to their aromatic properties and harvested at night to enhance their freshness and aromas. The grapes are then pressed and stored: some in the form of fresh grape juice and others fermented. Alcoholic fermentation allows Pierre Chavin to obtain all the beneficial qualities of the wine, including polyphenols, tannins, resveratrol, vitamins, minerals and other compounds with nutritional and antioxidant properties and still show the fermented character of the product! Once the wine is obtained, the dealcoholisation phase takes place: in order to preserve all the characteristic flavours and aromas of a good wine, Pierre Chavin follows a precise dealcoholisation protocol called Spinning Cone Column (SCC), which uses rotating conical disks in combination with a vacuum using centrifugal force. This method is the most effective for collecting and preserving the volatile components (aromas) of a wine at low temperature. Based on thermal and distillation processes, it makes it possible to produce a non-alcoholic beverage without loss of aroma and is the only method that reduces the alcohol content below 0.3% - 0.0%. The search for absolute zero was the decisive factor in choosing this method. This "column" transforms the wine into thin liquid films, at the same time a fresh vapour created by the wine itself rises from below and carries away all the lighter molecules of the liquid in the first of the 2 steps while the ultra-light ones that make up all the delicate aromas and flavours of the wine are condensed into a colourless liquid essence that is then kept separate. The process is repeated to remove the amount of alcohol and the whole process allows 100% of the product's original aromas and flavour compounds to be recovered and retained !
