Aurea Fenice takes its inspiration from the mythical Phoenix, the legendary bird that rises from its own ashes, a symbol of rebirth and eternal youth. Like the Phoenix, this non-alcoholic sparkling wine carries with it the promise of a new era in the world of alcohol-free drinks.
Aurea Fenice sparkling white wine is the result of more than 10 years of experience in dealcolation and has been produced in Italy with the most advanced technology currently available. No flavourings or other ploys have been added to hide or improve defects, as with all our products.

Organoleptic characteristics :

colour : a rich and brilliant straw yellow
aroma : fresh scent with hints of sage, lily of the valley, elderflower and apricot
taste : round, consistent, sweetish with slightly acidulous notes

Ingredients : drink obtained from the total dealcoholisation of white wine, grape must, added carbon dioxide. Free of flavourings and preservatives.

Allergens : contains sulphites from the wine of derivation

Profile : dry/extra dry (between 14 and 30g residual sugar per litre)

*Our company chooses not to add any preservatives but to pasteurise the product.

Manufacturer and brand history

Princess® is the brainchild of Michele Tait, an expert cellarman with over 20 years of experience in the creation and processing of wine.
After gaining numerous experiences in the oenological field, he decided to start his own company called "Health Wine srl", with which he still offers consultancy services and technological support to wineries throughout Europe.
In 2012, Michele Tait conducted a study to lower the alcohol content of wine with the aim of keeping the beneficial and healthy properties intact. At that time, the importance of completely removing alcohol and giving the world new drinks emerged and finally, after some experiments, he succeeded in realising his idea by completely de-alcoholising a wine and thus giving birth to the brand Alternativa® and the company Princess® Srl (written in the foil on the neck of the bottles), owner of the brand. In 2016 Princess® Srl obtained Halal certification and consequently the Alternativa® brand became suitable for people of the Islamic religion, thus expanding the market towards Arab countries.
A brief parenthesis: " Halal " certification serves to guarantee that products comply with the ethical and hygiene standards of Islamic law and doctrine.
Name " Alternativa " was chosen by Michele with the aim of encapsulating a concept: to offer an " alternative " to those who do not drink alcohol. In addition to the concept, the choice of the word " Alternativa " recalls a principle of universality due to its similarity in many languages.
Alternativa® is dedicated to those who feel different and want to be different, to those who have the courage to go against the tide and fight for their ideas, to those who believe that things change and must change, and to those who are always focused on the future and therefore create it.

To conclude, the Alternativa® brand is first and foremost an idea, a dream that sets itself the ambition of naming the drink itself; a beverage derived from a wine and beer dealcohol known throughout the world as an alternative, and recently the new labels and products Aurea Fenice (sees the light in November 2023 from a fusion of history, territoriality and experience in dealcoholization of wine) and Mo.od - Fossile Fiorentino - have been created.

Production process and dealcoholisation method

Alternativa®, Aurea Fenice and Mo.od - Fossile Fiorentino - wines are obtained by removing the alcohol from the normally vinified wine and at the end of fermentation through a delicate osmotic/mechanical process with permeo-selective membranes that increase the concentration of all the wine's fixed components (organic acids, phenols, anthocyanins, tannins, etc.) without having to enrich them with extraneous additions to the wine. The wine thus concentrated generally has better organoleptic and sensory qualities while preserving its initial colour, quality and colloidal structure than the enriched wine. This reverse osmosis process has an operating pressure that normally varies between 16 and 45 bar and does not - obviously - replace the valuable work that must always be done in the vineyard, but it does help to obtain high quality wines even in the case of complicated harvests. The process, moreover, operates at room temperature (allowing all the aromatic part of the wines to be preserved) without heating and with very low pressure values. The most important aspect to consider is that the higher the quality of the starting product, the better the end result. The wine must already be filtered and the quality of the water used for extraction is essential (softened and filtered).

Alternativa®, Aurea Fenice and Mo.od - Fossile Fiorentino - are neither grape juice nor must, but a 0.0 dealcoholised wine that keeps the organoleptic properties of the starting product intact.

Our products can be drunk by workers, expectant mothers, athletes, teenagers and people of all religions (Halal certification). In short, our products are suitable for everyone! And they in no way compete with wine, as it is a non-alcoholic derivative drink.

All Alternativa®, Aurea Fenice and Mo.od - Fossile Fiorentino products are free of colouring agents, preservatives and chemical additives. The stability of the product is guaranteed through a hot pasteurisation process, allowing them to remain unaltered for a long time (at least 24 months) and they are perfectly healthy and genuine 100% made in Italy.

The objective that Princess®srl has set itself is to make its products known and appreciated all over the world, also opening up to markets as yet unknown.
